Position Overview: The Culinary Lead performs all cooking responsibilities for residents, Sisters, and the Guest Dining Room so that prepared food can be served in accordance with established schedules, and is responsible for all aspects of hot/cold food preparation as well as baked items for all entities on campus. The Culinary Lead provides training to Culinary staff members and will assume supervisory responsibilities for the kitchen in the absence of the Culinary Services Director and Sous Chef.
Key Duties & Responsibilities
People: The Culinary Lead instructs and trains new employees as needed in all aspects of food service and sanitation and may prepare, set up, and service special functions and catered events.
Quality: Cooks all foods according to established menus and standardized recipes following HACCP guidelines, and performs food production work efficiently, while monitoring a neat and sanitary work area.
Operational Excellence: Ensures portion control, appearance and temperature of all food items, and ensures timely beginning of meal service. Labels, covers, dates, and stores unused food items. Delivers and retrieves food from Sisters’ Dining Room.
Qualifications: Prior cooking and food production experience, preferably in a healthcare facility.
Schedule: This is a full time position, approximately 40 hours per week; days and times may vary.
