Position Overview: Under the direction of the Director of Culinary Services, the Sous Chef shares responsibility for all associates in the department who are engaged in achieving the highest standards in food quality and presentation at Mount St. Francis, to include the nursing center residents, retreat center guests, the Sisters, and special events.
Key Duties & Responsibilities
People: The Sous Chef will assign and coordinate work of department associates, review and approve payroll, and assist in hiring, training, coaching, and evaluating staff. Assist Dietician in planning menus. The Sous Chef will assume responsibility for the department in the absence of the Director.
Quality: The Sous Chef will ensure the efficient operation of the kitchen processes and procedures following state and federal regulations, order and receive food and supplies, and inspect kitchen, dining areas, utensils, and equipment to ensure sanitary standards are met.
Operational Excellence: The Sous Chef will oversee the preparation and service of food for the entire campus, ensuring proper temperature and quality, as well as timeliness of meal service.
Schedule: 40 hours per week, days and work times will vary.
